The history of the carbonara pasta recipe
Do you know that most good recipes were invented by Italians and French? The carbonara pasta recipe is no exception. There are countless stories that revolve around this delicious recipe and in this case the truth is somewhere in between.
One of the most beautiful stories about the carbonara pasta recipe tells us that it was prepared by workers from the Apennine mountains, who made charcoal. Legend has it that these workers were also members of a secret and revolutionary society.
Another legend says that these workers left the recipe of their descendants as an inheritance and that initially, it was prepared on coal.
But still, what is so special about this cabronara pasta recipe? Well, it was a recipe with simple ingredients, which you could find anywhere and which provided your caloric needs. In a way, it was the perfect food.
Legends also say that the pepper poured in abundance over these pastas is, in fact, coal dust. In any case, carbonara pasta is a relatively new recipe in the gastronomic history of Italy.
The carbonara pasta recipe has been present in Italy since the 1950s and was known as a heavy culinary fad.
Even if the exact origin of this recipe was not found, it was cooked from spaghetti or tagliatelle, chopped goose or pork breast, eggs and cheese. However, we know for sure that it belongs to the Italians.
What ingredients should you use
Easter. The icing on the cake in this combination, the pasta used in this recipe is usually spaghetti. However, just about any type of long pasta can be used.
Meat. The original recipe for pasta carbonara uses guanciale (ie a bacon made from pork leg or pork breast).
Cheese. Great attention, this is very important. You can’t use any kind of cheese for carbonara pasta. If you want a recipe as per the book, then use one of the two: Pecorino Romano or Parmigiano Reggiano. You can even try a combination of the two, but using another cheese no longer results in the carbonara pasta recipe.
Eggs or cream. The original recipe used only eggs, whole or just yolks. The cream specific to the carbonara pasta recipe is obtained by mixing eggs with parmesan. However, in some parts of Italy the cream is found in the preparation. That’s because the cream I was telling you about isn’t easy to make. If you put the cream over the overly hot pasta, you can get an omelet and not a cream. However, a good recipe for pasta carbonara excludes cream from the start.
Salt and pepper. Salt in food is like love, you know. It must not be missing and it must not be missing from the carbonara pasta recipe either. It is absolutely necessary for the pepper to be used and to be freshly ground, for an explosive taste. And, as you probably know from Grandma’s recipes: always put salt to boil. Therefore, it is necessary to use salt when cooking pasta. However, be very careful not to put salt in the cream with Parmesan, because it is already too salty!
Here are the steps of the carbonara pasta recipe:
You need:
- 200 gr spaghetti;
- 2 eggs and 2 egg yolks;
- 100 gr parmesan;
- 100 gr bacon;
- ¼ tablespoon of fresh pepper;
- 4 tablespoons salt
- For starters, bring the pasta to a boil. Add the 4 tablespoons of salt to the water.
- Put the bacon in a cold pan and let it cook in its own fat, over medium heat, for a few minutes.
- Turn off the heat and add the pasta over the meat, without draining, then stir.
- In another bowl, mix the eggs, egg yolks, pepper and Parmesan cheese. Beat them well.
- Pour the composition over the pasta.
